Spent a little more time checking out food blogs this week – Vacation :) ! back to work monday :( – and was inspired to give these Bacon, Basil, and Bleu Cheese Stuffed Turkey Burgers, a shot. (Courtesy of Amanda and Tyler at What We’re Eating.)

My wife was a little reluctant, but didn’t protest. Neither of us knew if we liked bleu cheese all that much, having never given it a fare shake (save the spinach salad kit at Trader Joes), but definately worth trying… so I whipped up a batch tonight.

The recipe called for 1 pound of turkey, yeilding 4 burgers, I was able to squeeze 6 out of the 1.3+ pound package we bought. I tried adjusting the filling amounts to compensate – and somehow ended up with about twice as much as we needed. They went together pretty quickly, but were fairly soft, so I opted to cook them on the stove top, rather than risk losing them to the grill.

The recipe calls for topping the burgers with tomatoes, zucchini, spinach and a lemon vinagrette (which sounds amazing… but our fridge is a bit empty – trading grocery shopping for eating out more often than not this week) so taking the tip that any toppings would work – or “rock” actually, we went with boston lettuce, ketchup and stone ground mustard on a warm whole wheat bun.

The verdict? Excellent. My wife had seconds, I ate 3. Our three year old even finished hers…

These could very well be the last, or rather only, burgers I ever make.
